its HISTORY -
Coffee is native to the Kaffa region of Ethiopia, in Africa, and
was first cultivated commercially around a.d. 500. This variety
was called " moka ", named for the Red Sea port of Al-Mukkah,
where it was first brought for export and trade along the Mocha-Java
Trade Route. Dutch traders traveling the Route transported and introduced
young coffee seedlings to the Western World, finding an excellent
environment for cultivation in the tropical regions of Central &
South America nearly 1000 years later.
- the ROAST -
We offer coffees from all over the world. KeenBean roasts only premium
Arabica coffees. Inferior-grade Robusta coffees will never be used.
We
roast coffees in varying degrees, or profiles, that we believe best
suit the characteristics of each particular variety. Lighter roasts
tend to preserve the acidity of the coffee, providing sharpness,
or " bite " . Darker roasts tone down the acidity, allowing
the individual characteristics of that variety to shine through.
Dark roasts are typically smoother, richer in flavor, and fuller
in body. Light roasts are crisper and " brighter " in
character, thinner in body, and offer a cleaner " finish "
in the cup.
